Misuji is the name of a rare part of beef with a beautiful marbling pattern located on the shoulder. The Chinese character for "misuji" is "san-suji.
It gets its name from the fact that it is sandwiched between three stripes (suji).
The more athletic an area of meat is, the more muscular and firm it is, and the less athletic it is, the softer it is.
While the shoulder to the arm is more of an athletic area, the meatballs are located on the inside of the shoulder blade and do not move much, so they are more marbled and tender.
