At Seieien, we serve it with special attention to the way it is cut and sliced. There are two flavors, salt sauce and misotare, with misotare being the recommended one.

It is called "Shimachou" because of the wavy ridges on its surface that resemble stripes. We sell it under the product name "Horumon."
